Cherry Bourbon Jelly

Ingredients

  • 2 cans (1 lb. each) water-packed sour red cherries
  • 1 (1 3/4 oz.) pkg. powdered pectin (Sure-Jell)
  • 2 1/2 c. sugar
  • 1/2 c. bourbon

Instructions

  1. Drain cherries, reserving fruit and 1 1/2 cups of juice. Combine the juice with pectin; bring to a boil.
  2. Add sugar; return to a rolling boil and boil for one minute, stirring constantly. Add bourbon and cherries.
  3. Pour into hot jars and cover at once with hot paraffin.
  4. Makes 4 to 5 cups.
