Cinnaplum Jam

- 1. Add Lemon Juice and Zest to a large, heavy bottom stock pot.
- 2. Peel, Pit, and coarsely chop the Plums - I like to use a potato peeler to peel the plums - add chopped plums to your pot.
- 3. Add Water, Cinnamon Sticks, and Agave to your plum pot
- 4. Place pot over medium heat, and gently heat the plum mixture for about 5 minutes to release the juices.
- 5. Add the sugar, and stir to dissolve. Make sure the mixture is not boiling when you add the sugar, or the sugar will crystalize.
- 6. Once sugar is completely dissolved slowly increase the heat to achieve a gentle boil.
- 7. Gently boil for 30 - 45 minutes, or until the set point has been reached. I test for a good set by adding a teaspoon of the jam to a chilled plate, and return the plate to the fridge for 2 minutes. If, after 2 minutes, your jam crinkles when you push it with your finger, your jam is set.
- 8. Add jam to sterilized jam jars and process for 10 minutes in a hot water bath.
