Cinnaplum Jam

Ingredients

  • Zest and Juice of 2 Organic Lemons
  • 13 Organic Plums
  • 1/3 cup Purified Water
  • 2 Cinnamon Sticks
  • 3 T Agave (or honey)

Instructions

  1. 1. Add Lemon Juice and Zest to a large, heavy bottom stock pot.
  2. 2. Peel, Pit, and coarsely chop the Plums - I like to use a potato peeler to peel the plums - add chopped plums to your pot.
  3. 3. Add Water, Cinnamon Sticks, and Agave to your plum pot
  4. 4. Place pot over medium heat, and gently heat the plum mixture for about 5 minutes to release the juices.
  5. 5. Add the sugar, and stir to dissolve. Make sure the mixture is not boiling when you add the sugar, or the sugar will crystalize.
  6. 6. Once sugar is completely dissolved slowly increase the heat to achieve a gentle boil.
  7. 7. Gently boil for 30 - 45 minutes, or until the set point has been reached. I test for a good set by adding a teaspoon of the jam to a chilled plate, and return the plate to the fridge for 2 minutes. If, after 2 minutes, your jam crinkles when you push it with your finger, your jam is set.
  8. 8. Add jam to sterilized jam jars and process for 10 minutes in a hot water bath.
