Ingredients

  • 4 doves or 9 quail
  • salt and pepper
  • 1/2 c. water
  • juice of 1 lemon
  • bacon drippings

Instructions

  1. Clean birds and split them down the back.
  2. Sprinkle with salt and pepper.
  3. Brown in bacon drippings in a heavy skillet for 20 minutes, turning frequently.
  4. Add lemon juice and water; cover and bake at 350° for about 45 minutes or until tender.
  5. Baste frequently during baking, adding water, if necessary, to prevent sticking to the pan.
  6. Serves 2.
