Fall Pumpkin Muffins

Ingredients

  • 1 box yellow cake mix (I used Duncan Heines), 2 eggs, 1/2 cup apple sauce, about 16oz. pumpkin, 2 diced up apples (I used Honey Crisp Apples), 1 Tlbs. cinnamon, 1 tsp. pumpkin pie spice, 1 tsp. vanilla.

Instructions

  1. Pre-heat oven to 350, prepare cup cake pan with either liners or grease.
  2. Mix all wet ingredients together first then add the dry.
  3. Cook for approx. 20 min. or until firm and passes the clean knife test.
  4. They shouldn't rise too much, so if they fall a little after baking it's ok. They are too good to care about looks.
