Quick Battered Bluegills

Ingredients

  • 1 lb. bluegill fillets
  • 2 c. dry pancake batter
  • 10 oz. milk
  • salt and pepper to taste
  • dash of garlic powder

Instructions

  1. Rinse fillets and dip in dry pancake batter.
  2. Then mix 2 cups pancake batter using milk in place of water.
  3. For a thicker coating, use less milk.
  4. Add remaining ingredients to pancake mix. Dip fillets in batter and fry in hot oil until golden brown. Number of servings varies.
