Sulfuring Apples

Sulfuring Apples are traditionally prepared with a sulfur treatment, combining tartness and a unique flavor profile, ideal for those interested in old-fashioned fruit preservation techniques.

Ingredients

  • peel 1 gallon apples, cut up and cored
  • 1 crock
  • 1 heavy small soup bowl
  • 2 tablespoons sulfur
  • clean white cloth
  • small pieces of wood

Instructions

  1. Beat the yolk of one egg; add one-fourth teaspoon each of salt and paprika and beat again.
  2. Use an egg beater and beat in two tablespoons of vinegar or lemon juice; beat vigorously.
  3. Add a teaspoon of olive oil and continue beating.
  4. Add oil, a teaspoon at a time, three or four times, beating vigorously.
  5. Meanwhile, add the oil by the tablespoon until a cup in all has been used.
  6. Finish with one tablespoon of boiling water, beating it in in the same manner as the oil.
