Sunflower "Truffles"

Ingredients

  • 2 1/2 C sunflower seeds, unsalted, ground in small batches in a coffee grinder
  • 1 1/2 T almond butter
  • 1 1/2 T raw honey

Instructions

  1. 1. Mix together ingredients with
  2. all but 1/2 C of the ground sunflower seeds.
  3. 2. Form into 1 1/2" balls.
  4. 3. Roll balls in remaining 1/2 C ground sunflower seeds to coat.
  5. 4. If not serving immediately, store in refrigerator, separated by wax paper.
