Tomato Stew

Ingredients

  • 3 slices smoky bacon, diced (3/4 c.)
  • 1 purple onion, chopped (1 c.)
  • 4 c. chopped tomatoes or 4 c. stewed tomatoes
  • salt and pepper to taste
  • 1/2 tsp. Tabasco or to taste
  • 4 to 5 baking powder biscuits, broken into large pieces or 4 slices bread, torn into large pieces

Instructions

  1. In a hot heavy bottomed pot or Dutch oven add bacon and onion. Cook over medium-low heat, stirring often until onion is soft and bacon is lightly browned.
  2. Add tomatoes, salt, pepper and Tabasco. Cook 10 minutes, stirring often.
  3. Add the broken biscuits and cook 2 or 3 minutes more.
  4. Taste and if too acidic, add sugar to balance flavors.
  5. Serve hot.
  6. Serves 4.
