Watermelon Granizado

- Cut the watermelon in large pieces and remove the seeds. Chop mint leaves into very fine strips . Blend lemon juice and elderberry syrup with the watermelon. Add chopped mint leaves and pinch of salt and fill into a cake tin lined with cling film.
- Put into the freezer for at least four hours or until firm.
- Take the Watermelon Granizado out of the freezer 30 minutes before serving. Scratch the surface with a fork and fill into glasses.
