African Ugali

Instructions
- Bring water and salt to a boil.
- In a bowl, stir milk into cornmeal until smooth.
- Slowly pour cornmeal paste into boiling water, stirring for a few minutes until mixture thickens.
- Cook slowly over low heat (with pan on a heat diffuser if available), stirring briskly once a minute then smoothing over bottom of pan again.
- After a while the Ugali will become stiff and pull away from the sides of the pan.
- Turn Ugali into a cool damp bowl. With dampened hands, shape into a smooth ball and serve.
