Ingredients

  • 1 c. water
  • 1 tsp. salt
  • 1 c. milk
  • 1 c. white cornmeal

Instructions

  1. Bring water and salt to a boil.
  2. In a bowl, stir milk into cornmeal until smooth.
  3. Slowly pour cornmeal paste into boiling water, stirring for a few minutes until mixture thickens.
  4. Cook slowly over low heat (with pan on a heat diffuser if available), stirring briskly once a minute then smoothing over bottom of pan again.
  5. After a while the Ugali will become stiff and pull away from the sides of the pan.
  6. Turn Ugali into a cool damp bowl. With dampened hands, shape into a smooth ball and serve.
