Ingredients

  • 1 box mochiko
  • 2 (3 oz.) boxes apricot flavored Jell-O
  • 2 c. sugar
  • 12 oz. can apricot nectar

Instructions

  1. Mix all ingredients together well.
  2. Pour into a greased 9 x 13-inch baking pan.
  3. Cover tightly with tinfoil and bake at 350°F for 55 to 60 minutes.
  4. Remove from oven and after 15 minutes, remove the tinfoil.
  5. Cool for several hours.
  6. Cut into bite-sized pieces.
  7. Roll in potato starch or kinako (soybean flour).
  8. Shake off excess starch.
