Ingredients

  • 1/2 c. sugar
  • 2 tsp. cornstarch
  • 1/3 c. water
  • 1 tsp. finely shredded lemon peel
  • 1/4 c. lemon juice
  • 3 beaten egg yolks

Instructions

  1. Lemon Mousse:
  2. In saucepan combine sugar and cornstarch; add water, lemon peel and lemon juice.
  3. Cook and stir over medium heat until thickened and bubbly.
  4. Gradually stir hot mixture into egg yolks; return to saucepan.
  5. Cook and stir over medium heat until thickened and bubbly; cook and stir 2 minutes more.
  6. Remove from heat.
  7. Cool slightly, then cover and chill.
  8. Beat 1 cup whipping cream to soft peaks, fold 1/2 cup into lemon mixture.
  9. Fold lemon mixture into remaining cream.
