- Lemon Mousse:
- In saucepan combine sugar and cornstarch; add water, lemon peel and lemon juice.
- Cook and stir over medium heat until thickened and bubbly.
- Gradually stir hot mixture into egg yolks; return to saucepan.
- Cook and stir over medium heat until thickened and bubbly; cook and stir 2 minutes more.
- Remove from heat.
- Cool slightly, then cover and chill.
- Beat 1 cup whipping cream to soft peaks, fold 1/2 cup into lemon mixture.
- Fold lemon mixture into remaining cream.
