Black Cherry Jam Recipe

Ingredients

  • 10 c. pitted ripe black cherries
  • 6 2/3 c. sugar
  • 1 1/3 c. water
  • 1 x cake paraffin for sealing the jars

Instructions

  1. Sterilize 3-4 1-pint jars.
  2. Pit large black cherries till you have 10 c. of them.
  3. Add in sugar to cool water in saucepan, boil 5 min, skimming carefully.
  4. Pour this over the cherries in a large pot or possibly preserving kettle, bring quickly to a boil again, skim carefully and frequently.
  5. Cook till thick and transparent, or possibly about 40-50 min.
  6. Pour into prepared jars.
  7. When cool, cover with melted paraffin, cover and seal tight.
  8. Makes 3-4 pints.
