Ingredients

  • 1 cup sugar
  • 2 cups water
  • apples, peeled, cored and quartered
  • 1 tablespoon salt per quart of water

Instructions

  1. Make a thin syrup by combining sugar and water and boiling until the sugar dissolves.
  2. Prepare the apples by peeling, coring, and quartering them.
  3. Put the quartered apples into a weak brine made with 1 tablespoon salt per quart of water until ready.
  4. Drain the apples from the brine.
  5. Drop the drained apples into boiling syrup and cook until they become transparent, about 3 to 5 minutes.
  6. Pack the cooked apples into clean, hot glass jars, filling them to overflowing with hot syrup.
  7. Seal the jars immediately to preserve.
