Chocolate Raspberry Sauce

Ingredients

  • 1 c. heavy cream
  • 5 Tbsp. raspberry jam
  • 4 1/2 oz. fine quality bittersweet chocolate (not unsweetened), chopped fine
  • 1 oz. unsweetened chocolate, chopped fine

Instructions

  1. In a heavy saucepan, bring cream to a simmer with the jam, whisking.
  2. Remove the pan from the heat.
  3. Add the chocolates and a pinch of salt.
  4. Let the mixture stand for 3 minutes.
  5. Whisk it until it is smooth; whisk in the cassis.
  6. Strain the sauce through a fine sieve set over a bowl; serve it warm over ice cream.
  7. Makes 1 1/2 cups.
