Cucumber Sake Shots

Ingredients

  • 1 large cucumber
  • 1/2 shot lime juice
  • 1 tablespoon sugar
  • 2 shots watermelon rum (recommended: Bacardi Grand Melon)
  • 1/2 shot sake

Instructions

  1. Cut 4 (2-inch) long pieces out of the cucumber.
  2. Use a melon baller to carefully scoop out flesh from 1 end, leaving a 1/2-inch bottom on the other end.
  3. Repeat with remaining cucumber pieces, reserving cucumber flesh.
  4. Combine cucumber flesh with lime juice in a blender.
  5. Blend until smooth, about 15 seconds.
  6. Pour cucumber puree through a fine mesh strainer, reserving 1/2 cup of cucumber juice.
  7. Add sugar and set aside.
  8. Pour watermelon rum and sake into a cocktail shaker filled with ice cubes.
  9. Add reserved cucumber juice and shake vigorously.
  10. Pour into cucumber shot glasses.
  11. Serve immediately.
