Ingredients

  • 6 slices Bacon Cut Into 1/2 Inch Strips
  • 1 whole Leek, Sliced
  • 4 cups Water
  • 1 Tablespoon Chicken Bouillon (or 3 Cubes)
  • 1 cup Quick Grits

Instructions

  1. In a medium sauce pan on medium heat, saute bacon and leeks until soft.
  2. Add water and bouillon and bring to a boil on high heat.
  3. Whisk in the grits and reduce heat to medium. Cover and cook for 7 minutes.
  4. Turn off the heat, stir in the cayenne pepper (if using) and let sit for 5 minutes.
  5. I suggest trying this with the cayenne the first time, then you can adjust the spice level to your taste. I used as little as possible to keep the flavor.
