Fresh Elderflower Juice

- Put the elderflower heads in a large, heatproof container with the lemon slices. Add the citric acid and sugar and pour in 1 1/2 gallons boiling water. Stir to dissolve the sugar.
- Cover loosely and let stand for 2 days under refrigeration.
- Strain through a fine mesh strainer. Pour into glasses and decorate with lemon slices. Top off with still or sparkling water if desired.
