Ingredients

  • 20 None freshly picked large elderflower heads
  • 2 None lemons, sliced
  • 1/4 cup citric acid powder
  • 5 cups sugar
  • None None lemon slices, to serve
  • None None chilled still or sparkling water for topping off

Instructions

  1. Put the elderflower heads in a large, heatproof container with the lemon slices. Add the citric acid and sugar and pour in 1 1/2 gallons boiling water. Stir to dissolve the sugar.
  2. Cover loosely and let stand for 2 days under refrigeration.
  3. Strain through a fine mesh strainer. Pour into glasses and decorate with lemon slices. Top off with still or sparkling water if desired.
