Frosted Lemons

Instructions
- Grate rind from 2 lemons.
- Slice them in half and juice them. Combine rind, juice and sugar and stir until sugar dissolves. Pour mixture into a chilled ice tray or shallow pan and slowly add half and half.
- Stir constantly until well blended.
- Freeze 2 hours.
- Cut remaining lemons in half lengthwise, removing juice and pulp.
- (Save for another purpose.)
- Fill each half with lemon cream.
- Serve at once with mint garnish.
- Serves 4.
