Frosted Lemons

Ingredients

  • 6 lemons
  • 1 pt. half and half
  • 1 c. sugar

Instructions

  1. Grate rind from 2 lemons.
  2. Slice them in half and juice them. Combine rind, juice and sugar and stir until sugar dissolves. Pour mixture into a chilled ice tray or shallow pan and slowly add half and half.
  3. Stir constantly until well blended.
  4. Freeze 2 hours.
  5. Cut remaining lemons in half lengthwise, removing juice and pulp.
  6. (Save for another purpose.)
  7. Fill each half with lemon cream.
  8. Serve at once with mint garnish.
  9. Serves 4.
