Ginger-Ale + Ginger Candy

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup ginger, peeled,sliced
  • 1 cup seltzer water (not sure of EXACT amount)
  • 1 cup lime juice (to taste)

Instructions

  1. Bring ginger, water, and sugar to a rolling boil.
  2. Turn heat to low.
  3. Let mixture simmer and reduce to a strong-tasting syrup.
  4. Strain syrup from ginger slices.
  5. Refrigerate syrup to thicken.
  6. Mix 1 part syrup to 7 parts seltzer water (depending how strong you like it).
  7. Add lime juice to taste.
  8. Toss remaining ginger slices in sugar.
  9. Place in warming oven and let dry.
