Ingredients

  • 2 c. water
  • 1 c. yellow corn meal
  • 1/4 c. shortening
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 eggs, beaten
  • 1 c. evaporated milk

Instructions

  1. Combine first 5 ingredients in a saucepan.
  2. Cook over medium heat until thickened, stirring constantly.
  3. Remove from heat. Combine eggs and milk; stir into cornmeal mixture.
  4. Pour into a lightly greased 1 1/2-quart casserole dish.
  5. Bake at 425° for 30 to 35 minutes or until inserted knife comes out clean.
