Lemon Puff Pie

Ingredients

  • 1 (3 oz.) pkg. lemon pudding (not instant)
  • 1/3 c. sugar
  • 2 c. water
  • 2 eggs
  • 2 Tbsp. lemon juice

Instructions

  1. In saucepan, combine pudding, sugar and 1/4 cup water.
  2. Add 2 egg yolks and blend.
  3. Add remaining 1 3/4 cups of water.
  4. Cook until thick.
  5. Add lemon juice.
  6. Pour half of filling in baked 8-inch pie shell.
  7. Beat egg whites and fold remaining half of filling into the whites while hot.
  8. Chill.
