Loganberry Tapioca

Ingredients

  • 6 Tbsp. quick tapioca
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 (12 oz.) tin loganberry juice
  • 3/4 c. water
  • 1 1/2 Tbsp. lemon juice

Instructions

  1. Mix tapioca, sugar, salt, loganberry
  2. juice and water.
  3. Stir well and cook over direct heat, stirring constantly, until it reaches a full, rolling boil.
  4. Remove from heat and stir in lemon juice.
  5. Cool and chill before serving.
  6. It becomes much thicker when cold.
  7. Serve with top milk or cream.
  8. Makes 5 servings.
