Mango Mint Granita

Ingredients

  • 3 whole Mangoes, Peeled And Sliced
  • 5 whole Fresh Peppermint Leaves
  • 1 cup Water
  • 3 Tablespoons Lite Coconut Milk
  • 1 Tablespoon Lime Juice

Instructions

  1. In a large food processor, combine mango slices and peppermint leaves.
  2. Process until a smooth puree is formed.
  3. Transfer to a large bowl and add water, coconut milk, lime juice and sugar.
  4. Transfer mixture into a 9x13 glass or metal baking dish.
  5. Place in the freezer for 3 hours.
  6. Each hour, whisk the mixture, making sure to incorporate the frozen edges.
  7. Prior to serving, mash with a fork and stir evenly.
  8. Spoon mixture into glasses and enjoy!
