Mango Mint Granita

Instructions
- In a large food processor, combine mango slices and peppermint leaves.
- Process until a smooth puree is formed.
- Transfer to a large bowl and add water, coconut milk, lime juice and sugar.
- Transfer mixture into a 9x13 glass or metal baking dish.
- Place in the freezer for 3 hours.
- Each hour, whisk the mixture, making sure to incorporate the frozen edges.
- Prior to serving, mash with a fork and stir evenly.
- Spoon mixture into glasses and enjoy!
