Microwave Peach Jam

Ingredients

  • 4 c. frozen sliced unsweetened peaches
  • 1 pkg. powdered fruit pectin
  • 1 Tbsp. sugar
  • 1/2 tsp. ascorbic acid
  • 1 Tbsp. lemon juice

Instructions

  1. Mash peaches; combine with all ingredients in deep 2 quart casserole.
  2. Cover; microwave on High 2 minutes.
  3. Stir and cover; microwave 3 to 4 minutes or until boils for 1 minute.
  4. Remove. Stir 2 minutes.
  5. Pour into freezer container.
  6. Cover and freeze. Thaw to serve.
  7. Store in freezer up to 1 year; in refrigerator 1 month.
