- In a cocktail shaker, muddle 1 of the cucumber slices with the mint leaf.
- Add the gin, lime juice and Simple Syrup and shake without ice.
- Fine strain into a chilled crushed-ice-filled rocks glass and garnish with the remaining cucumber slice.
