Mixed Haloumi Salad

Ingredients

  • 5.25 oz mixed greens
  • 1 (15 oz) jar baby beets, drained, halved
  • 1 bunch asparagus, trimmed, blanched
  • 1/2 bunch fresh mint leaves
  • 1/2 lb haloumi cheese, cut into thin slices
  • 1 tbsp olive oil + extra, to serve

Instructions

  1. Distribute mixed greens, beets, asparagus and mint between 4 serving plates.
  2. Heat a large frying pan over medium heat. Brush haloumi with oil and season. Sear for 1-2 mins per side, until golden. Arrange over salad.
  3. Serve drizzle with olive oil and lemon wedges on the side.
