Old-Fashioned Pole Beans

Ingredients

  • 3 lb. fresh pole beans
  • 1 (1/2 lb.) ham hock
  • 5 c. water
  • 2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Clean and remove strings from beans; cut beans into 2-inch pieces.
  2. Place ham hock in water in Dutch oven; bring to boil. Reduce heat, cover and simmer 1 hour.
  3. Add beans, salt and pepper; continue cooking for 45 minutes or until tender.
  4. Yield: 10 to 12 servings.
