- Soak the beans overnight in 3 cups water.
- Saute sausage; add to bean water.
- Cook until beans are soft, but not mushy.
- Add seasonings, broth and tomato sauce; simmer just until flavors blend.
- This can be made one day in advance.
- Before serving, cook pasta and refresh with cold water before adding to bean mixture. If added while hot, pasta will absorb too much of the liquid.
