Pickled Anchos

Ingredients

  • 2 cups apple cider vinegar
  • 2 3/4 cups sugar
  • 3 ounces dried ancho chiles, stemmed, seeded, and cut or torn into 1-inch strips

Instructions

  1. Combine the vinegar and sugar in a small saucepan.
  2. Bring to a boil over high heat, stirring until the sugar has dissolved.
  3. Remove from the heat.
  4. Add the ancho strips, making sure they are submerged.
  5. Let them sit for at least 1 hour, or until the anchos have softened.
  6. Drain them and use right away, or cover and refrigerate.
