Ingredients

  • 3 potatoes
  • 4 Tbsp. sugar
  • about 1 1/2 c. cold water
  • 1 cake yeast or 1 pkg. dry yeast
  • 1 c. warm water
  • 1 1/4 c. boiling water

Instructions

  1. Cook potatoes in boiling water.
  2. Mash the cooked potatoes with the water they were cooked in.
  3. Add sugar, salt, and enough cold water to make 3 1/4 cups of liquid.
  4. Allow this mixture to become warm.
  5. Add the yeast dissolved in 1 cup warm water.
  6. Allow this mixture to stand overnight until it is light and frothy.
  7. Pour off 1 cup to save as a starter for the next baking.
  8. Store the remaining starter in a loosely covered jar in the refrigerator.
  9. When ready for use, set the jar in warm water until it reaches 82°F.
  10. Use the starter within about a week.
  11. Work flour into this mixture as in sourdough bread recipes.
