Quick-Cured Pork Loin

Ingredients

  • 3 pounds pork loin roast boneless
  • 1/4 cup vegetable oil
  • 3 cloves garlic minced
  • 2 tablespoons salt coarse

Instructions

  1. Place roast in large (2-gallon) self-sealing bag. Add oil, garlic and salt, and rub over pork, coating roast well. Seal bag and refrigerate 2-24 hours.
  2. Remove pork from marinade (discard any remaining marinade) and place on grill. Lower grill hood and grill for 1 hour (20 minutes per pound, until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. Serve sliced with Mustard-Dill Sauce.
