Quick-Cured Pork Loin

- Place roast in large (2-gallon) self-sealing bag. Add oil, garlic and salt, and rub over pork, coating roast well. Seal bag and refrigerate 2-24 hours.
- Remove pork from marinade (discard any remaining marinade) and place on grill. Lower grill hood and grill for 1 hour (20 minutes per pound, until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. Serve sliced with Mustard-Dill Sauce.
