Raspberry Chicken Breasts(Microwave)

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 2 tsp. finely chopped ginger root
  • 1/3 c. raspberry preserves
  • 2 tsp. raspberry flavored vinegar

Instructions

  1. Arrange chicken breast halves with thickest part to the outside edge in a square dish (8 x 8 x 2-inch).
  2. Sprinkle with ginger root.
  3. Microwave on High for 8 to 10 minutes, rotating dish half turn after 4 minutes.
  4. Mix preserves and vinegar in 1-cup measure.
  5. Microwave 30 to 60 seconds, or until warm.
  6. Serve over chicken.
  7. Serve with rice pilaf and fresh raspberries as garnish.
