Raspberry Chicken Breasts(Microwave)
Ingredients
- 4 skinless, boneless chicken breast halves
- 2 tsp. finely chopped ginger root
- 1/3 c. raspberry preserves ⓘ
- 2 tsp. raspberry flavored vinegar
Instructions
- Arrange chicken breast halves with thickest part to the outside edge in a square dish (8 x 8 x 2-inch).
- Sprinkle with ginger root.
- Microwave on High for 8 to 10 minutes, rotating dish half turn after 4 minutes.
- Mix preserves and vinegar in 1-cup measure.
- Microwave 30 to 60 seconds, or until warm.
- Serve over chicken.
- Serve with rice pilaf and fresh raspberries as garnish.
