Ingredients

  • 2 pints raspberries
  • 2 tablespoons lemon juice
  • 1/4 cup sugar
  • Ice cubes
  • Seltzer, chilled
  • Garnish: fresh mint sprigs

Instructions

  1. Blend raspberries, lemon juice and sugar in a blender until smooth. Force mixture through a fine-mesh sieve into a bowl. Spoon 2 Tbsp. puree into each of 8 tall glasses. Fill glasses with ice cubes and pour in enough chilled seltzer to just cover ice. Stir well. Garnish with sprigs of fresh mint, if desired.
