Ingredients

  • strip cuts of round steak (any round)
  • 1/2 c. plus 1 Tbsp. sugar
  • 1 c. salt
  • 1 tsp. salt peter (sodium nitrate)

Instructions

  1. Save half of mix and set aside.
  2. Rub 1/2 on meat.
  3. Refrigerate 3 days.
  4. Remove and rub on other half of saved mixture.
  5. Dry at room temperature for approximately 3 days.
