Ingredients

  • leftover baked potatoes
  • butter or margarine
  • sharp or extra sharp Cheddar
  • bacon bits (optional)

Instructions

  1. Slice the baked potatoes lengthwise and lay on bottom of baking pan.
  2. Baste with melted butter.
  3. Bake at 350° until crisp and golden.
  4. Cover with shredded cheese and top with bacon bits or chives.
  5. Bake just until the cheese bubbles.
  6. Serve.
