Tapioca Pudding(Microwave)

Ingredients

  • 2 c. skim milk
  • 1/4 c. sugar
  • 1/4 c. quick cook tapioca
  • 2 eggs, separated
  • 2 Tbsp. sugar

Instructions

  1. Combine milk, 1/4 cup sugar, tapioca and egg yolks in a 2-quart dish; blend well.
  2. Cook on Full power for 6 to 8 minutes, or until mixture begins to boil.
  3. Stir 2 or 3 times during cooking.
  4. Beat egg whites until frothy.
  5. Gradually add sugar. Beat in vanilla.
  6. Fold into pudding mixture.
  7. Cool.
  8. Chill, if desired.
