Tarragon Pickles

Ingredients

  • 1 gal. (large) whole sour pickles
  • sugar
  • 1 heaping tsp. pickling spice
  • 2 garlic cloves (leave whole)
  • 4 Tbsp. tarragon vinegar

Instructions

  1. Drain sour pickles; slice.
  2. Layer pickles in a large mixing bowl or crock with equal amounts of sugar (no juice).
  3. Place pickling spice, garlic and tarragon vinegar on top.
  4. Weigh down with a plate.
  5. Refrigerate for 3 days, stirring thoroughly, once a day (first time after 25 hours).
  6. At end of 3 or 4 days, put in clean jars (after removing garlic).
