Ingredients

  • 4 lb. beef rib roast
  • salt and pepper

Instructions

  1. Place meat, fat side up, in a 15 1/2 x 10 1/2 x 2-inch roasting pan.
  2. Season with salt and pepper.
  3. Insert a meat thermometer. Roast in a 325° oven until:
  4. rare, 2 1/2 hours or 140°; medium, 3 hours or 160°; or well done, 3 1/4 hours or 170°.
  5. Cover with foil to keep warm.
