Ingredients

  • 6 diced bacon slices
  • 1/2 c. chopped onion
  • 3 c. diced potatoes
  • 2 (7 oz.) cans minced clams and liquid
  • 1 c. water
  • 2 (13 oz.) cans evaporated milk
  • salt and pepper

Instructions

  1. In a 3-quart glass casserole, microwave on High the bacon and onion for 3 to 4 minutes.
  2. Add potatoes, clam liquid and water; microwave on High 15 to 18 minutes, stirring every 4 minutes.
  3. Add clams and milk and salt and pepper to taste.
  4. Microwave on High 5 minutes, stirring twice.
  5. Rest 5 minutes.
  6. Serves 4 to 6.
