Alaskan Clam Chowder

Ingredients

  • 4 large potatoes
  • 1/2 lb. slab bacon
  • 2 medium onions
  • 1 doz. fresh clams or 1 1/2 c. canned clams
  • 1 qt. milk
  • 1 tsp. salt
  • fresh black pepper

Instructions

  1. Pare and cut potatoes in 1/2-inch cubes, place in pot and enough water to cover.
  2. Cook over medium heat until tender, not so much to lose shape or "mealy."
  3. Cut bacon into 1/2-inch cubes, fry until golden brown and lightly crisp, drain on towel, same some of the grease.
  4. Peel, slice and cube onions, fry in bacon fat until soft and golden.
  5. Lift out and add to potatoes.
  6. Season with salt and a generous amount of freshly ground pepper.
