- Pare and cut potatoes in 1/2-inch cubes, place in pot and enough water to cover.
- Cook over medium heat until tender, not so much to lose shape or "mealy."
- Cut bacon into 1/2-inch cubes, fry until golden brown and lightly crisp, drain on towel, same some of the grease.
- Peel, slice and cube onions, fry in bacon fat until soft and golden.
- Lift out and add to potatoes.
- Season with salt and a generous amount of freshly ground pepper.
