Apricotlets(Candy)

Ingredients

  • 1 c. dried apricots
  • 3/4 c. water
  • 2 Tbsp. gelatin
  • 2 c. sugar
  • 1 c. chopped nuts
  • 1 tsp. vanilla

Instructions

  1. Cook apricots and water; mash and cool.
  2. Measure 1 1/4 cups. Soak gelatin in cooled apricots.
  3. Add sugar and heat in double boiler.
  4. After heating thoroughly, transfer pan with apricots to a low flame and bring to a boil.
  5. Cook for 5 minutes, stirring constantly.
  6. Remove from heat.
  7. Add nuts and vanilla; cool.
  8. Pour into an 8 x 8-inch pan lined with Saran Wrap and coat with white Karo syrup.
  9. Cover and refrigerate for 3 days.
  10. Cut into cubes. Roll in cornstarch, then powdered sugar.
  11. May use applesauce in place of apricots.
