Apricotlets(Candy)

- Cook apricots and water; mash and cool.
- Measure 1 1/4 cups. Soak gelatin in cooled apricots.
- Add sugar and heat in double boiler.
- After heating thoroughly, transfer pan with apricots to a low flame and bring to a boil.
- Cook for 5 minutes, stirring constantly.
- Remove from heat.
- Add nuts and vanilla; cool.
- Pour into an 8 x 8-inch pan lined with Saran Wrap and coat with white Karo syrup.
- Cover and refrigerate for 3 days.
- Cut into cubes. Roll in cornstarch, then powdered sugar.
- May use applesauce in place of apricots.
