Ingredients

  • 8 C cooked rice
  • 2 large cans (7 oz ea) diced green chiles
  • 1/2 C each firm packed minced fresh cilantro and parsley
  • 3/4 C minced green onions (including tops)
  • 1 1/2 C sour cream
  • salt and pepper
  • 1 3/4 C (7 oz) shredded jack cheese

Instructions

  1. In a large bowl, combine rice, chiles, cilantro, parsley and green onions. Add sour cream and stir until blended; season to taste with salt and pepper.
  2. Spread half the rice mixture in a 9 x 13 baking pan and top with half the cheese; repeat layers. Bake in a 350 degree oven until hot and bubbly (about 35 minutes).
