Ingredients

  • 5 potatoes (russets and yukons work great)
  • 1 onion, chopped
  • 4 tablespoons butter

Instructions

  1. Boil the potatoes just until tender.
  2. In the meantime, sweat the chopped onion in the butter until translucent.
  3. When potatoes are cool enough to handle, peel and cut into bite sized chunks.
  4. Put potatoes in baking dish.
  5. Pour butter and onions over potatoes.
  6. Cover dish with foil and bake at 350 degrees for about an hour.
  7. Shake dish once or twice during baking.
  8. Remove foil and allow to brown to your preference.
  9. Note: You can cook these longer at a lower temperature if you wish.
  10. They're done when you think they're done.
  11. Note: Add salt and pepper if you like.
