Baked Mashed Potato Balls

Instructions
- Add egg yolks and parsley to mashed potatoes.
- Beat egg white until stiff and fold into potato mixture.
- Shape into balls.
- Bake in lightly greased muffin tins or drop on a greased sheet.
- Bake at 350° until crisp.
- Turn to brown evenly.
