Barbecued Alligator

Ingredients

  • 2 lb. alligator fillet
  • salt and pepper to taste
  • vinegar
  • 4 to 5 tsp. prepared mustard
  • barbecue sauce

Instructions

  1. Sprinkle alligator with vinegar and then roll in the mustard, salt and pepper.
  2. Let stand for 1 hour.
  3. Barbecue on low fire without basting for about 1 hour.
  4. Butterfly fillet by slicing in half and placing the outside down.
  5. Baste inside with your favorite barbecue sauce and cook until done.
