Barbecued Alligator

Instructions
- Sprinkle alligator with vinegar and then roll in the mustard, salt and pepper.
- Let stand for 1 hour.
- Barbecue on low fire without basting for about 1 hour.
- Butterfly fillet by slicing in half and placing the outside down.
- Baste inside with your favorite barbecue sauce and cook until done.
