Barbecued Dolphin

Ingredients

  • 2 lb. dolphin fillets
  • 1 stick butter or margarine
  • 1 to 2 tsp. hot sauce

Instructions

  1. Rinse dolphin and pat dry.
  2. Put dolphin in nonreactive pan. Heat up butter in pan.
  3. Add hot sauce and lemon juice.
  4. Let butter mixture cool a little. Pour over dolphin.
  5. Let sit for 10 minutes. Put dolphin on grill and baste with remaining butter mixture. Dolphin is ready when it flakes easily.
