Ingredients

  • raspberries, strawberries, blackberries, cherries or currants (enough to produce 2 1/2 pt. of juice)
  • 2 lb. sugar
  • 1 pt. water

Instructions

  1. Mash berries well and strain through a jelly bag or use a juicer.
  2. Add water and sugar to a preserving kettle and place over heat, stirring until dissolved.
  3. Bring to a boil, continue stirring until clear and skim.
  4. Let syrup boil again until a soft ball is formed in cold water, then slowly add the fruit juice. Boil again.
  5. Skim, pour into hot sterilized jars and seal.
