A refreshing berry tapioca salad with creamy Cool Whip, perfect for summer gatherings or light desserts, combining sweet berries, tender tapioca, and cool whipped topping.

Ingredients

  • 5 cups water
  • 3/4 teaspoon salt
  • 1 cup sugar
  • 8 ounces Cool Whip
  • 1 cup fresh or well drained frozen strawberries or raspberries
  • 1/2 cup and 1 tablespoon small pearl tapioca

Instructions

  1. Bring water and salt to a boil.
  2. Add tapioca and cook slowly for 20 minutes, stirring occasionally.
  3. Remove from heat and add sugar.
  4. Stir well and add gelatin if using (note: gelatin not in original ingredients).
  5. Cool overnight in refrigerator.
  6. Before serving, add berries and Cool Whip.
