Berryless Raspberry Jam

A vibrant, tangy raspberry-flavored jam made with green tomatoes and raspberry jello, perfect for spreading on toast or using as a unique condiment for a fresh twist.

Ingredients

  • 1 1/2 cups water
  • green tomatoes
  • 2 cups sugar
  • 1 (3 oz.) box raspberry jello

Instructions

  1. Measure 1 1/2 cups water and place it in a blender.
  2. Add green tomatoes to the blender so that the total blended mixture makes 4 1/2 cups.
  3. Use only green tomatoes with no hint of pink.
  4. Bring the mixture to a boil and boil for 10 minutes.
  5. Add 2 cups sugar and boil for an additional 10 minutes.
  6. Skim foam off the top of the mixture.
  7. Remove from heat and quickly stir in the raspberry jello.
  8. Pour into a container and cover with paraffin and lids or refrigerate.
  9. Any flavored jello can be used.
